Techniques and Skills Cooking Class

This class is geared for a person wanting to expand their knowledge of sauce techniques that will make them a confident cook during the Holidays. We will start with a béchamel and showing versatility in everyday cooking. Next, you will learn a classic roux. One of the most basic thickening agents used in French cuisine. You will learn how to create flavorful, creamy sauces using this ingredient. Lastly, this course will focus on preparing emulsion sauces, such as mayonnaise, hollandaise, and a vinaigrette. After this course, students will have the knowledge and confidence to prepare different sauces for a wide variety of Holiday applications. We will prepare a curry chicken salad using the homemade mayonnaise, a pear walnut green salad with the vinaigrette, and steamed asparagus accompanying the hollandaise sauce.
